Ingredients

500g chicken breast, cubed

1 tsp olive oil

1 ½ tbsp Mingle Fajita Seasoning
-
1 red capsicum, sliced
-
1 green capsicum, sliced
-
1 red onion, diced
-
300g pasta
Sauce:
-
½ cup cream (light or full-fat, depending on preference)
-
1 cup chicken stock
-
1 heaped tbsp Mingle Fajita Seasoning
-
30g grated parmesan
-
Optional: extra parmesan and parsley to serve
Directions
Cook pasta according to packet instructions in salted boiling water. Drain and set aside, reserving a splash of pasta water.
Sauté onion and capsicum for 3–4 minutes until slightly softened.
Add chicken and Mingle Fajita Seasoning.
Add chicken stock, cream, Mingle Fajita Seasoning, and parmesan to the pan. Stir and simmer for 2–3 minutes until the sauce thickens slightly.
Add the cooked pasta, tossing everything together. Add a splash of reserved pasta water if needed to loosen the sauce this will help the sauce get nice and glossy.
Serve immediately, garnished with fresh parsley and extra parmesan cheese.
