As summer draws to a close, make the most of the season with a refreshing Cobb-ish Salad that's incredibly easy to prepare and perfect for two! This vibrant dish combines fresh ingredients with a creamy dressing, making it a delightful choice for a light meal or a side dish.
Ingredients
- 1 cos lettuce heart
- 400g chickpeas, drained
- 1 tomato, diced
- 1 boiled egg, chopped
- 1 avocado, diced
- 3 bacon rashers, chopped
- ½ red onion, diced
Dressing:
- ½ cup Greek yoghurt

1 tsp Mingle Citrus Pepper seasoning
- 1 tbsp olive oil
Directions
To a large sealable container, add your dressing ingredients and whisk all together.
Layer lettuce, chickpeas, tomato, egg, avocado, bacon, and red onion on top of the dressing.
When hungry, pour out into a salad bowl and mix all together so the dressing coats all the ingredients.
