This Chow Mein Noodle Salad is not only packed with various textures and flavors but also incredibly easy to prepare. It’s an ideal dish when you want something light yet filling. Enjoy this vibrant, colorful salad as a refreshing meal option!
Ingredients
Salad:

100g vermicelli noodles

1 cucumber, cut into moons

A handful of cherry tomatoes, halved

½ red onion, finely sliced

Spring onion greens, finely sliced

Fresh coriander leaves, to taste
Pork:
- 500g pork mince
-
2 tbsp Mingle Chow Mein recipe base
- ¼ cup spring onions
Dressing:
- 4 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tsp white wine vinegar
-
1 tbsp Mingle Sweet Chilli sauce
- 2 garlic cloves, minced
- Juice of 1/2 a lime
Directions
Cook vermicelli noodles according to the packet instructions. Rinse under cold water and set aside.
Brown the pork mince and spring onion whites with the chow mein seasoning in a pan over medium heat.
In a small bowl, whisk together your dressing ingredients until smooth.
Add the cooled noodles, cucumber, tomatoes, red onion, spring onion greens, coriander, and cooked pork to a large bowl.
Pour the dressing over the top and toss gently to combine all the flavours.
Divide into 3 airtight containers and store in the fridge for an easy, ready-to-go meal.
