Chow Mein Chicken Dumpling Pinwheels

Ingredients

500g chicken mince

2 tbsp Mingle Chow Mein Recipe Base

2 spring onions, finely sliced

1 tsp sesame oil
-
1 tbsp soy sauce
-
20 wonton wrappers
-
1 tbsp neutral oil

⅓ cup water

Extra sliced spring onion, to serve

Chilli oil, to serve
Directions
Add chicken mince, Mingle Chow Mein Recipe Base, spring onion, sesame oil and soy sauce to a bowl. Mix until well combined.
Lay the wonton wrappers onto a chopping board in a large rectangle, slightly overlapping the edges as you go.
Brush the overlapping edges lightly with water and press together so the wrappers form one large sheet.
Spread the chicken mixture evenly over the wrappers in a thin layer, leaving a small border around the edges.
Starting from one long edge, tightly roll the wrappers into a long sausage shape.
Using a sharp knife, slice the roll into approximately 3cm-thick pinwheels.
Heat oil in a large non-stick frying pan over medium heat. Place the pinwheels cut-side down and cook for 2–3 minutes until deeply golden.
Flip and cook for another 2 minutes.
Pour the water around the pinwheels, immediately cover with a lid and steam for 5–7 minutes, or until the chicken is completely cooked through and the wrappers are tender.
Remove the lid and allow any remaining water to evaporate so the bottoms crisp up again.
Top with spring onion and chilli oil to serve.
