Chilli Lime Smashed Potato

Ingredients
- 300g potato gems
- 2 tbsp whole egg mayonnaise
- 1/4 cup natural flavoured yoghurt
- 1 heaped tbsp Mingle’s Chilli Lime seasoning
- 1/4 red onion, finely diced
- 1/4 cup fresh coriander, finely diced
Directions
Preheat oven to 180°C.
- Bake the potato gems on a lined tray for 10 minutes, then remove from oven.
- Using a glass jar flatten each potato gem onto the tray. Ensure they’re not touching and transfer back to the oven for 30 more minutes.
- Meanwhile, mix together mayonnaise, yoghurt, Chill Lime Seasoning, onion & coriander in a salad bowl.
- After the 30 minutes, remove the potatoes from the oven and let cool for about 5 minutes before adding to the sauce. Mix well & serve immediately
