Ingredients

2 chicken breasts

1 onion, diced

1 red capsicum, sliced

1 tsp olive oil

1 packet Mingle Fajita Seasoning
Sauce:
-
1 cup passata
-
2 tbsp tomato paste
-
½–1 cup water or chicken stock
Layers:
-
4 wraps
-
1–1½ cups grated cheese
Directions
Preheat oven to 180°C.
Heat olive oil in a large pan over medium heat. Add onion and capsicum and cook for 4–5 minutes until softened.
Add Mingle Fajita Seasoning, salt and pepper, and cook for 1 minute to bring out the flavour.
Pour in passata, tomato paste and chicken stock. Stir to combine into a rich sauce.
Add the chicken breasts directly into the sauce. Cover and simmer gently for 10–15 minutes until the chicken is cooked through.
Remove the chicken and reserve 2 tbsp of the sauce. Shred chicken, then return it to the pan. Let it simmer for a few more minutes so it absorbs the sauce.
In a baking dish, add tbsp sauce, place a wrap, layer the chicken mixture, then a layer wraps. Repeat until everything is used.
Finish with the reserved sauce spread over the top and sprinkle with grated cheese.
Bake for 20–25 minutes until golden, bubbling and the cheese is melted.
