Ingredients

2 large portobello mushrooms, stems removed

2 slices prosciutto

2 eggs

1 teaspoon Mingle Everything Bagel Seasoning (½ teaspoon per mushroom)

1 teaspoon olive oil

Fresh chives, finely chopped, to serve
Directions
Preheat oven or airfryer to 200°C. Line a baking tray with baking paper.
Gently wipe the portobello mushrooms clean and remove the stems. Lightly brush both sides with olive oil and place them on a tray. Bake for 8 to 10 minutes until they begin to release moisture.
Remove from the oven and carefully drain any liquid from the mushrooms or gently pat dry with a paper towel.
Layer a slice of prosciutto into each mushroom and crack an egg into the centre of each.
Sprinkle ½ teaspoon of Mingle Everything Bagel Seasoning over each stuffed mushroom.
Return to the oven and bake for 10-15 minutes, or until the egg is cooked and the prosciutto has crisped.
Remove from oven and top with chopped chives.
