Ingredients

Mingle Backyard BBQ Seasoning
- 4 skin on Chicken thighs
- 4 chicken drumsticks
- 4 large white potatoes, chopped in bite sized pieces
- 1 tbsp tomato paste
- Juice of ½ lemon
- ¼ cup EV olive oil
- ½ cup chicken stock
- Fresh parsley to top
Directions
Preheat oven to 180°C.
- In a large casserole dish, combine ½ container of Backyard BBQ seasoning, chicken stock, olive oil, tomato paste & lemon juice.
Add in potatoes, chicken thighs & chicken drumsticks. Mix well. (Pro tip, use gloves to mix all the marinade evenly over everything).
- Transfer to oven & bake for 1 hour or until cooked through.
- Remove from oven & sprinkle over fresh parsley.
- Serve with your favourite greens or salad.
