This Antipasti Smashed Potato Salad is the perfect salad for everyone to enjoy! 🥔💜
Ingredients

800g baby potatoes

1 tbsp olive oil
-
2 tsp Mingle Garlic & Herb Seasoning

1/2 cup sliced roasted capsicum
-
1/2 cup sundried cherry tomatoes
-
125g bocconcini
-
Handful fresh basil leaves
-
3 tbsp Mingle Balsamic Dressing
Directions
Preheat oven to 220°C and line a tray with baking paper.
Boil potatoes until fork tender. Drain and allow to steam dry slightly.
Place potatoes onto the tray and gently smash using the bottom of a glass or fork.
Drizzle with olive oil and season with Mingle Garlic & Herb Seasoning.
Airfry at 200c for 20 minutes or until golden and crispy.
Add smashed potatoes, roasted capsicum, sundried cherry tomatoes, bocconcini and basil to a serving bowl.
Drizzle generously with Mingle Balsamic Dressing and toss gently to combine.
Serve warm or at room temperature.
