Mingle's Spicy Mexican Quick Tacos
Ingredients:
1 X onion (finely diced) |
2 X garlic cloves (finely diced) |
100ml X stock (vegetable or beef) |
1 X can of tomatoes (400g) |
1 x capsicum- half a green and half a red (diced) |
1 x carrot (diced) |
500g of beef mince or plant based mince |
1 X packet of tortillas (try our favourites available via the Mingle online shop) |
1/2 X bunch of coriander (Chopped) |
1/2 of chill (chopped) |
1 X lime |
1 X tablespoon of olive oil |
Mingle Spicy Mexican Seasoning |
Method:
1. Heat pan with olive oil. Sweat onions, garlic & chili until translucent. |
2. Add mince and brown. |
3. Add capsicum and 3 tablespoons of Mingle Spicy Mexican seasoning. |
4. Add can of tomato, stock and tomato puree - bring to a simmer. |
5. Top with salt and pepper to taste. Add a sprinkle of coriander and a squeeze of lime. |
6. Serve with Mingle sides, tortillas & cheese. |
