Mingle's Spicy Mexican Quick Tacos
This is a spicier version of our Mingle Taco's. Still milder in nature than your chili lovers tacos. This is the ultimate weeknight hero - an after work, uninspired, just wanna eat something healthy and delicious....quickly kind of dish.
1 finely diced onion
2 garlic cloves finely diced
100 ml of stock (beef or vegetable)
1 400 g can of tomatoes
1 diced capsicum half green and half red
1 diced carrot
500 g of beef mince or a plant based alternative
1 pack of tortillas
1/2 bunch of chopped corriander
1/2 a chopped chili
3 tbsp of Mingle's Spice Mexican
HEAT pan with olive oil. Sweat onions, garlic & chili until translucent.
ADD your mince and cook until browned.
ADD capsicum and 3 tablespoons of Mingle Spicy Mexican seasoning.
ADD a can of tomato, stock and tomato puree - bring to a simmer.
TOP with salt and pepper to taste. Add a sprinkle of coriander and a squeeze of lime.
