Mingle's Charred Corn and Avocado Salad

Mingle's Corn and Avocado Salad


2 x ears of corn
1 x avocado (cubed)
14 x cherry tomatoes (cubed)
1 x red onion (chopped)
1 x bunch of coriander (chopped)
1 X lime
Mingle Spicy Mexican Seasoning
4 tablespoons of olive oil
Optional: crumbled Greek feta



1. Mix 2 x tablespoons of olive oil and 1 x tablespoon of Mingle Spicy Mexican Seasoning together. Brush mixture over corn.
2. Char corn over an open flame on BBQ or in a heavy bottom pan, until blackened. Wrap in foil and set aside.
3. Chop all onion finely, quarter your cherry tomatoes and chop your coriander roughly.
4. Make dressing out of lime, 1 tablespoon of Mingle Spicy Mexican Seasoning, olive oil and salt and pepper to season.
5. Chop corn (take off cob). Mix all ingredients together and dress. Optionally sprinkle some crumbled feta on top. 
6. Serve up as a side to any of our dishes.
