Mingle's Charred Corn and Avocado Salad
This is the ultimate, vibrant side dish to any Mexican meal. Sweet, tangy and delicious. It will bring a little colour to any Mexican Fiesta.
2 ears of corn
1 diced avacado
1 punnet of halved cherry tomatoes
1 bunch of chopped coriander
4 tbsp of Mingle Spicy Mexican
4 tbsp of olive oil
Crumbled feta cheese
1 red thinly sliced red onion
MIX 2 tbsp of olive oil and 1 x tablespoon of Mingle Spicy Mexican Seasoning together. Brush mixture over corn.
CHAR corn over an open flame on BBQ or in a heavy bottom pan, until blackened. Wrap in foil and set aside.
CHOP all onion finely, quarter your cherry tomatoes and chop your coriander roughly.
MAKE dressing out of lime, 1 tablespoon of Mingle Spicy Mexican Seasoning, olive oil and salt and pepper to season.
CHOP corn (take off cob). Mix all ingredients together and dress. Optionally sprinkle some crumbled feta on top.
USE a stick blender to blend the soup until until smooth. Add sour cream & mix through.
SERVE up as a side to any of our dishes.
