Ingredients
- 2 salmon fillets
- Dijon mustard, for spreading
- 60g breadcrumbs
- 15g Parmesan cheese

Mingle's Garlic & Herb Seasoning
- 150g Greek yoghurt
- 30g feta cheese
- Juice of 1 lemon
- 1 tsp garlic puree
- 2 zucchinis
- 1 can chickpeas, drained
- Fresh basil, chopped
- Chives, chopped
- Salt and pepper, to taste

Directions
Prepping the Salmon
In a bowl, mix breadcrumbs, Parmesan cheese, and Mingle's Garlic & Herb Seasoning.
Dry salmon fillets and spread Dijon mustard on them, then coat the top with the breadcrumb mixture.
Making the Yogurt Sauce
In a separate bowl, combine yogurt, lemon juice, garlic puree, and feta, mashing the feta into the yogurt.
Cooking the Zucchini Mix
Using a peeler, peel zucchinis, avoiding the seeded core.
In a pan, sauté drained chickpeas, zucchini peels, fresh basil, and chives with a pinch of salt and pepper.
Cooking the Salmon:
Air fry the salmon fillets at 190°C for 10-12 minutes until the crumb is golden.
Serve the golden salmon with the zucchini mixture and drizzle with yogurt sauce. Dig in!
