Ingredients
- 500g beef mince, pork mince or tofu

½ cabbage, shredded

1 carrot, sliced

1 capsicum, sliced
-
1 zucchini, cubed
-
2 spring onions, sliced (reserve for garnish)

½ cup rice
-
350mL chicken stock
-
2 tbsp sesame oil

40g Mingle Chow Mein Recipe Base

Crushed peanuts, to serve

Fresh coriander (if you’re not a hater)
Directions
Prep the flavour
- Set aside 2 tsp (10g) of the Mingle Chow Mein Recipe Base for later.
Brown the protein:
- Heat sesame oil in a large pan over medium heat. Add your mince or tofu and cook for about 5 minutes until browned.
Add the veg:
- Toss in the cabbage, carrot, capsicum, and zucchini. Cook for 2 minutes.
Simmer it all:
- Stir in the remaining spice mix, rice, and chicken stock. Cover and cook on low heat for 25 minutes, stirring occasionally, until rice is tender.
Finish strong:
- Remove from heat, stir through the reserved spice mix, and let it rest for a minute.
Top & serve:
- Garnish with spring onions, crushed peanuts, and coriander. Serve hot and dig in!
