Mingle takes your ordinary cauliflower and turns it into a crumb-tastic schnitzel sensation!
Ingredients
- 1 Cauliflower, sliced longways into "steaks"
- Corn flakes, blitzed for the crumb (approx. 1-1.5 cups)
- Mingle's Spicy Mexican seasoning (1-2 tsp, adjust to taste)
- 1 egg, beaten
- Diced tomatoes (approx. 1 cup)
- Cheese (approx. 1 cup, shredded or sliced)
- Sprinkle of Mingle's Mambo Italiano seasoning
Directions
Preheat your oven to 200 degrees Celsius and line a baking tray with parchment paper.
In a blender or food processor, blitz corn flakes until you have a fine crumb. Mix this with a generous sprinkle of Mingle's Spicy Mexican seasoning.
Dip each cauliflower "steak" first in the beaten egg, ensuring all sides are well-coated.
Coat the egg-drenched cauliflower with the seasoned corn flake crumb. Ensure an even coat for the crispiest results!
Place each coated cauliflower slice onto the lined oven tray.
Pop these in the oven for about 15-20 minutes, or until they start to become golden and slightly tender.
Remove the cauliflower schnitzels from the oven. Top each with diced tomatoes and a sprinkle of Mingle's Mambo Italiano seasoning.
Sprinkle cheese generously over each "steak".
Return to the oven for another 10-15 minutes, or until cheese is melted and bubbly.
Let the schnitzels cool for a moment, then plate up! These go wonderfully with chips or a fresh salad.
