Ingredients

2 chicken breasts, halved
- 2 tbsp Olive oil

1 Mingle American BBQ Roast or Rub packet

4 Tbsp Mingle BBQ Sauce
- 1/2 cup Ranch dressing
- 1 Iceberg lettuce
- ¾ cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 small red onion, diced
- 3 Spring onions, diced
Directions
Add the halved chicken to a bowl with olive oil and ¾ of the Mingle American BBQ Roast/Rub. Toss to coat, then cook in the air fryer at 180°C for 7 minutes.
- Brush the chicken with BBQ sauce and return to the air fryer for a further 5–7 minutes, or until cooked through (depending on thickness).
- While the chicken cooks, whisk together the ranch dressing and the remaining ¼ packet of the American BBQ rub until well combined.
- Allow the chicken to rest, then finely slice or dice it.
- Add lettuce, corn, tomatoes, red onion, spring onions, chicken, and the dressing to a large salad bowl. Toss well and serve.
