Oven Toasted Chicken Tacos

Ingredients
- 2 chicken breasts, finely diced
- ½ red and yellow capsicum, finely diced
- 1 red onion, finely sliced

1 packet Mingle Taco recipe base
- 1 cup shredded cheese
- 6 mini tortillas
- 100g sweet corn, drained
Directions
Heat a drizzle of oil over medium heat. Sauté your capsicum and red onion until they’ve softened up. Toss in the chicken breast and cook for 2–3 minutes.
Sprinkle over the Mingle Taco Seasoning and cook until fragrant. Stir in a handful of shredded cheese—just melty enough to bind everything together.
Brush your tortillas with olive oil. Stuff each one with the chicken mix and stand them upright in a baking dish so they support each other.
Load them up! Sprinkle the remaining cheese and corn over the top of all the tacos.
Pop them in the oven at 180°C for 20–30 minutes. You’re looking for bubbly, golden cheese and golden-brown tortillas.
