One Pan Chicken Satay Udon Noodles

Ingredients
- 2 chicken breasts

Mingle Satay Recipe Base
- 2 garlic cloves, crushed
- ½ tsp ginger, crushed
- 1 tbsp soy sauce
- Udon noodles
- 1 lime
- 250ml coconut milk
- 150ml chicken stock
- Spring onions, chopped
- Sesame seeds
- Chilli oil (optional for topping)
Directions
In a pan on medium high heat, add neutral oil and cook chicken breast until golden (they will fully cook in the sauce later, so remove and set aside)
Add more neutral oil if needed, then add garlic and ginger cook until fragrant
Add soy sauce and Mingle Satay Recipe Base, allow to cook for a few mins to release flavour
Add coconut milk and chicken stock and place chicken back into pan, allow to simmer gently for 3-5 minutes
Add udon noodles and cook as per packet instructions
Spoon noodles into a bowl with sauce and place chicken on top, top with spring onions, sesame seeds and chilli oil
