Creamy Tuscan Gnocchi Bake

Ingredients
- 500g gnocchi
- 500g chicken breast, diced
- 1 tbsp olive oil
- 1 onion, finely diced
- 2 garlic cloves, minced

2 tbsp Mingle Tuscan Chicken seasoning
- 1 cup cream
- ½ cup chicken stock
- 1 cup cherry tomatoes, halved
- 1½ cups baby spinach
- Salt and pepper, to taste
- ½ cup grated parmesan cheese
Directions
Preheat oven to 180°C fan.
Heat olive oil in a pan over medium heat. Add onion and cook for 3–4 minutes until softened. Add tomatoes and cook for 2 minutes. Add garlic and cook for a further 30 seconds until fragrant.
Add diced chicken and 1 tbsp Mingle Tuscan Chicken Seasoning. Cook chicken for 3-5 minutes until browned (it will finish cooking in oven later)
Add chicken stock, cream, 1 tbsp Mingle Tuscan Chicken Seasoning, salt & pepper to taste. Mix well to combine. Leave to simmer for 5 minutes until thickens slightly.
Add spinach, gently folding through, remove from heat.
In a baking dish, add your gnocchi and then pour over the creamy sauce.
Sprinkle evenly with grated parmesan cheese.
Bake uncovered for 25–30 minutes, or until the chicken is cooked through and the gnocchi is tender.
Remove from the oven and give everything a good stir.
(Optional) Return to the oven and switch to grill for a further 2-5 minutes, until the top is golden and lightly crispy
Remove from the oven, rest for a few minutes, then serve.
