Ingredients
For the chicken:

500 g chicken breast, sliced

1½ tbsp Greek seasoning

1 tbsp olive oil
For the orzo:

1 cup orzo
-
2½ cups chicken stock
For the vegetables:

1 small red onion, finely diced
-
2 cloves garlic, minced
-
1 medium zucchini, diced
-
2 large handfuls of spinach
For the creamy finish:
-
¾ cup light cooking cream
-
Juice of ½ lemon
-
¼ cup crumbled feta
To serve:

Fresh parsley or dill, chopped
Directions
Heat olive oil in a large pan over medium heat. Season the chicken with Greek seasoning, salt, and pepper. Cook until browned; it may still be pink inside, but don’t worry, it will continue cooking later! Remove from the pan and set aside.
In the same pan, add the diced onion and sauté for 2-3 minutes until soft.
Add the diced zucchini and cook for another 2-3 minutes until just tender, then stir in 1 tablespoon of Mingle Greek Garlic seasoning and cook for 30 seconds until fragrant.
Stir in the orzo, ensuring it’s coated in the flavorful oils and seasonings.
Pour in the chicken stock and add the browned chicken back to the pan. Bring to a gentle simmer and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and glossy. If the mixture looks too thick, add more stock or water to loosen it.
Reduce the heat to low, then pour in the light cooking cream and spinach. Stir gently until everything comes together beautifully and appears silky and glossy.
Remove from heat. Stir through the lemon juice and crumbled feta. Taste and adjust the seasoning with salt and pepper if needed.
Finally, finish your dish with a sprinkle of fresh herbs and a drizzle of olive oil right before serving.
