SATAY NOODLE SALAD
You'll Need:
- Salad:
- ½ x Mingle Satay Recipe Base
- 1 pack of vermicelli noodles
- 1 chicken breast (thinly sliced)
- Ready-made coleslaw mix
- 1 carrot (thinly sliced)
- 1 lebanese cucumber (thinly sliced)
- 2 sprigs of spring onion (thinly sliced)
- ½ red onion (thinly sliced)
- ½ fresh lime
- ½ avocado (sliced)
- Fresh coriander (chopped)
- Satay Dressing:
- ½ x Mingle Satay Recipe Base
- ¼ cup peanut butter
- 2 ½ tbsp water (with an option to add more for desired consistency)
- Juice of ½ fresh lime
- 3 tbsp soy sauce
- ½ tsp minced ginger
- 2 tsp chilli oil

- ½ tsp minced ginger
- 2 tsp chilli oil
