Ingredients

500g store-bought gnocchi

400g Italian sausages (approx. 4 sausages), sliced into chunks or squeezed from casings

1 zucchini, diced

1 red capsicum, diced

100g cherry tomatoes - galved

2 tbsp olive oil

2 tbsp Mingle Tuscan Chicken Seasoning

100g feta or ricotta

Fresh basil (optional)
Directions
Preheat oven to 200°C.
- On a large lined baking tray, toss gnocchi, zucchini, capsicum, and sausage pieces with olive oil and Tuscan Chicken Seasoning.
- Roast for 25–30 minutes, tossing halfway, until gnocchi is golden and sausage is cooked through.
- Scatter cherry tomatoes over tray in the last 10 minutes of cooking.
- Top with crumbled feta or dollops of ricotta. Garnish with fresh basil if using.
Recipe Note
• Leave out the sausage for a vegetarian option
• Swap sausage with sliced chorizo or plant-based sausage for variety
• To crisp gnocchi better, avoid overcrowding the tray
