Ingredients
- 6 boneless chicken thighs
- 2 tbsp olive oil (plus extra for cooking)

1 tbsp Mingle Tuscan Chicken Seasoning
- 2 cloves garlic, chopped
- 2 tbsp butter
- 1 cup dry orzo (risoni)
- 2 cups chicken stock
- 1 cup light cream
- 1 tbsp Dijon mustard
- ½ cup grated parmesan
- ½ cup chopped sundried tomatoes
- 2 cups spinach leaves
Directions
Rub chicken with olive oil and Tuscan Chicken Seasoning
Sear in a large oven safe pan until browned, then remove
In the same pan, melt butter and cook garlic and orzo until golden
Add stock and bring to a boil for 3 to 5 minutes. Stir in cream, parmesan, sundried tomatoes, and spinach
Return chicken to the pan, add a bit more seasoning, cover and simmer on low until the liquid is absorbed (around 20 minutes)
Serve it hot, no side dishes necessary
