20ml light thickened cream or yoghurt

50ml tomato paste

75ml chicken stock

25g sun-dried or cherry tomatoes

1/2 cup diced mushrooms

Handful of spinach

20g parmesan cheese

1 tbsp Mingle Tuscan Chicken seasoning
Directions
Preheat the oven to 190°C.
Add all ingredients to the dish and mix well.
Top with cheese and bake 35–45 mins until cooked.
