Ingredients
- 4 large potatoes
- 500g beef or chicken mince
- 2 tbsp Mingle Taco Seasoning
- ½ cup corn kernels
- ½ cup black beans (optional)
- 1 small tomato, diced
- 1 avocado, sliced or mashed
- ¼ cup grated cheese
- Olive oil
Directions
Preheat oven to 200°C.
- Scrub potatoes, prick with fork, and rub with olive oil. Bake directly on the oven rack for 45 minutes or until soft inside.
- While potatoes cook, heat oil in a pan and brown mince.
- Add Mingle Taco Seasoning, corn, black beans (if using), and 2 tbsp water. Cook 3–5 minutes until heated through.
- Cut open cooked potatoes. Fluff inside with a fork.
- Spoon taco mince on top. Add cheese, tomato, avocado.

Batch Tip: Double the mince and freeze half for another night
