Feta Cucumber Rolls

Ingredients
- 2 cucumbers
- 100g cream cheese
- 100g feta cheese, cut into long strips

A thorough shake of Mingle’s Greek Seasoning
- 1 small red onion, thinly sliced
- 1 small tomato, diced
- 8-10 kalamata olives, sliced
- ½ cup red wine vinegar
- 2 Tbsp shallot, minced
- ½ tsp freshly cracked black pepper

Directions
Prepare the cucumber strips:
- Trim the ends off the cucumbers.
Use a vegetable peeler or mandoline to slice the cucumber into thin, flat strips.
Continue slicing until you reach the centre, then flip the cucumber over and repeat (you should have 8-12 strips per cucumber).
Assemble the rolls:
Lay cucumber strips on a clean chopping board.
- Spread a thin layer of cream cheese over each strip.
Layer feta strips, a sprinkle of Mingle’s Greek Seasoning, red onion, tomato, and olive slices along the centre of the strip.
Roll and secure:
Carefully roll the cucumber strips into spirals, securing them with a toothpick if needed.
Make the vinaigrette:
In a small bowl, whisk together red wine vinegar, minced shallots, cracked black pepper.
Serve and dip:
Arrange the cucumber rolls on a platter and serve with the red wine vinaigrette as a dipping sauce.
