Ingredients
- 4 eggs
- 400g potatoes, diced small
- 1 red capsicum, diced
- 1 small zucchini, grated
- 3 beef or pork sausages (approx. 200–300g), casings removed
- 2 tbsp Mingle Backyard BBQ Seasoning
- 2 tbsp olive oil
- Optional: chopped parsley or spring onion
- 1 Crusty loaf of bread
Directions
Heat 1 tbsp oil in a large non-stick pan. Add sausage meat, breaking it up with a spoon. Cook until browned (4–5 minutes).
- Add potatoes and cook for 8–10 minutes until golden and soft, stirring occasionally.
- Add remaining oil, capsicum, zucchini, and Backyard BBQ Seasoning. Stir and cook for another 5 minutes.
- Push hash aside to create 4 gaps. Crack eggs directly into the pan.
- Cover with a lid and cook until eggs are done to your liking.
- Sprinkle with parsley or spring onion before serving and serve with slice crusty loaf.
Recipe Note
Swap: Use sweet potato instead of regular potato
Leftovers: Reheat well or wrap in flatbread for lunch
Shortcut: Use pre-cooked sausages—just dice and add with the veg
