Ingredients
- 250g lean beef mince
- 3 corn tortillas, street taco style

½ packet of Mingle’s Chipotle Taco Recipe Base
- 1 radish, finely diced
- 1/4 cup pickled red onion, diced
- 1/4 of a cucumber, diced
- 1/2 an avocado, cut into small cubes
- Juice of 1/2 lime
- 3 tbsp natural flavoured yoghurt
- Generous pinch of salt
- Fresh coriander
Directions
Combine radish, cucumber, onion, lime juice, avocado and a large pinch of salt in a bowl and mix together to make the salsa.
- In a large bowl, combine beef mince and Mingle’s Chipotle Taco Recipe. Mix together well.
- Using a third of the mixture, spread evenly over the tortilla, using your hands to squash it into the tortilla. Repeat to make 3 tacos.
- Heat a drizzle of olive oil over a large pan. Place the meat side facing down in the pan, cook for 4 minutes then flip for 1 minute, use a spatula to squash it into the pan. If you’re pan is big enough - do all 3 at the same time.
- Top each taco with 1tbsp of yoghurt and a scoop of salsa/
- Garnish with fresh coriander and serve
