Ingredients

1.2–1.5kg beef chuck roast or blade roast (trimmed)

3 carrots, chopped

2 potatoes, cubed

2 celery stalks, chopped
-
1 onion, quartered or thickly sliced

2 tbsp Mingle Use Me On Everything Seasoning

2½ cups beef stock
-
1 x 400g tin of tomatoes
-
1 tbsp tomato paste (for depth)

1 tbsp cornflour (optional, to thicken)
Directions
Place carrots, potatoes, celery, and onion in the bottom of the slow cooker.
- Rub beef with Mingle seasoning and place on top of veg.
- Add beef stock, tinned tomato and tomato paste to the cooker.
Cook on:
- Low for 7–8 hours
- High for 4–5 hours- Remove beef, slice or shred roughly.
- Optional: Mix cornflour with 1 tbsp water to make a slurry. Stir into the slow cooker and cook on high, uncovered, for 10–15 minutes to thicken.
- Return beef to the pot and mix through. Serve hot.
Recipe Note
Freezer tip: Freeze in portions with broth for easy reheating
Make it richer: Add a splash of Worcestershire or red wine at the start
Serving ideas: Serve with mashed potato, rice, or toasted bread
