Ingredients
- 1.2–1.5kg pork shoulder, trimmed
- 3 tbsp Mingle Backyard BBQ Seasoning
- 1 onion, sliced
- 2 tbsp tomato paste
- 1 orange, juiced
- ½ cup chicken stock or water
- ½ cup Mingle Backyard BBQ Sauce (add after cooking)
- Rolls and coleslaw to serve
Directions
- Place sliced onion in bottom of slow cooker. 
- Rub pork with Backyard BBQ Seasoning and place on top.
- Add tomato paste, orange juice and stock to the cooker. Cover and cook: 
 - Low: 8 hours
 - High: 4–5 hours
- Shred pork directly in the slow cooker and mix through the cooking juices.
- Stir in BBQ sauce and let sit for 5–10 minutes on warm to absorb.
- Serve on rolls with coleslaw, or in lettuce cups for a low-carb option.
Recipe Note
Freeze: Leftovers freeze well in 1-cup portions.
Bulk Cook: Ideal for entertaining or batch lunches.
