Ingredients
- 1 cup cooked jasmine rice
- 460g skin off salmon, cut into small pieces
- 2 nori sheets, cut into small pieces
- Mingle’s Furikake rice topper seasoning
- 1 avocado, diced
- 1 spring onion, green parts only, thinly sliced

Mingle’s Everything Bagel Seasoning
- Kewpie mayo
- EV olive oil
Directions
Preheat oven to 180 °C
- In a square baking dish, evenly spread cooked rice over the bottom.
- Scatter the chopped nori sheets over the rice then arrange the salmon in a single layer on top. Generously sprinkle furikake seasoning over the salmon.
- Drizzle some olive oil over the salmon and transfer to the oven and bake for 20 minutes
- Remove from the oven and top with avocado, spring onion, a drizzle of kewpie and Mingles Everything but the Bagel Seasoning.
