Ingredients
- 220g raw prawns

1 corn cob

1 cup red cabbage, shredded

½ red onion, diced

1 cup red capsicum, diced

1 red chilli, deseeded

1 lime
-
Handful of parsley, chopped

1 tsp olive oil
-
½ cup Greek yoghurt
-
1–2 tsp Mingle’s Chilli Lime Seasoning

Mingle’s Taco Seasoning
Directions
- Heat a pan over medium-high heat with a tsp of olive oil.
Slice corn kernels off the cob and add to the pan. Season with Mingle’s Taco Seasoning and cook until golden.
In the same pan, add prawns and another sprinkle of Taco Seasoning. Cook until pink and just cooked through.
In a large bowl, assemble your salad: cabbage, red capsicum, corn, red onion, chilli, and prawns.
In a small bowl, mix together Greek yoghurt, Mingle’s Chilli Lime Seasoning, and a squeeze of lime juice to make your dressing.
Drizzle dressing over your salad, top with chopped parsley, and finish with an extra lime squeeze.
Dig in and enjoy!
