Peri Peri Prosciutto Chicken Roll Ups

Ingredients
- 2 chicken breasts, thinly sliced

4-6 slices of prosciutto (enough to wrap each chicken breast)

A big, thorough shake of Mingle Peri Peri Seasoning

2 tbsp grated mozzarella cheese

1 spring onion, finely sliced

1-2 button mushroom, finely diced

1/4 capsicum, thinly sliced

1/4 red onion, thinly sliced

Olive oil spray
Directions
- Prepare the Chicken: Lay 2-3 slices of prosciutto overlapping slightly on a flat surface. Place a thinly sliced chicken breast on top of the prosciutto.
Season and Fill: Give the chicken breast a big, thorough shake of Mingle Peri Peri Seasoning. Top with 1 tbsp mozzarella, half the spring onion, mushroom, capsicum, and red onion.
Wrap the Rolls: Carefully roll the chicken and fillings, using the prosciutto to wrap tightly around the roll. Secure with toothpicks if necessary.
Preheat and Cook: Preheat your air fryer to 190°C. Lightly spray the rolls with olive oil and place them in the air fryer basket, ensuring they are not overcrowded.
Cook the Rolls: Cook for about 15 minutes, flipping halfway through, until the prosciutto is crispy and the chicken is cooked through. Use a meat thermometer to check the internal temperature of the chicken reaches 75°C for safety.
Slice and Serve: Let the rolls rest for 2 minutes, then carefully slice down the middle to reveal the gooey, flavourful filling. Serve immediately with your favourite dipping sauce or a side salad.
