This One Pot Lemon & Herb Chicken Risoni is a flavourful, comforting dish that brings a touch of brightness to your table. Marinated in Mingle's Lemon & Herb seasoning, tender chicken combines with Risoni, fresh veggies, creamy feta, and a squeeze of lemon for a zesty finish. Perfect for an easy weeknight dinner, this one-pot wonder is a delicious, wholesome meal with minimal clean-up.
Ingredients

Chicken 500g boneless chicken thighs or breasts, cut into chunks

1/2 tbsp lemon juice

1 tsp lemon zest

2 tbsp Olive Oil

2 tbsps Mingle's Lemon & Herb

2 tbsp olive oil

1 red onion, finely chopped
-
2 zucchini, cubed
-
1 capsicum, cut into sticks

2 1/2 cups chicken stock

250g baby spinach
-
1 1/2 cups Risoni
-
1 punnet of cherry tomatoes

1/2 cup cream
-
100g of feta, crumbed

3 tbsps Mingle’s Lemon & Herb Seasoning

Directions
Combine all chicken marinade ingredients in a bowl and leave for a minimum of 20 minutes in the fridge.
Preheat oven to 180°C Heat 1 tbsp olive oil in a oven proof pot over high heat. Cook chicken until lightly browned on the outside but still pink inside. Remove from skillet.
Add 1 tbsp olive oil into the pot that the chicken was cooked in.
Add onion and saute for 1 minute. Add remaining veg (leave out the spinach & tomatoes). Cook for 3 minutes.
Add Risoni, stock, cream, chicken, cherry tomatoes & spinach to the pot and bring to a simmer.
Once the pot is simmering, scatter feta over the top.
Bake for 15 minutes in the oven until the risoni is cooked. Squeeze lemon over the lop & serve.
