One Pan Tuscan Salmon

Ingredients
- 2 salmon fillets

1 tin butterbeans, drained

Fresh basil

200g cherry tomatoes

8 sun-dried tomatoes, drained and chopped

1 shallot, finely diced

2 cloves garlic, minced
-
A few handfuls of spinach

2 tablespoons Bulla Crème Fraîche

15g (3 teaspoons) Mingle’s Tuscan Chicken Seasoning — divided

5g (1 tsp) for salmon
-
10g (2 tsp) for sauce

200ml chicken stock
-
1 lemon (zest only)

Parmesan cheese, grated
Directions
- Rub the salmon fillets with 5g (1 teaspoon) of Mingle’s Tuscan Chicken Seasoning. Sear them in a hot pan on all sides until golden. Remove and set aside.
In the same pan, sauté the shallot and garlic until soft and fragrant.
Add the cherry tomatoes, chopped sun-dried tomatoes, 10g (2 teaspoons) of Mingle’s Tuscan Chicken Seasoning, and a handful of torn basil leaves. Sauté for a few minutes until the tomatoes begin to soften.
Pour in the chicken stock and bring to a simmer. Add the butterbeans and cook for 5 minutes.
Turn the heat to low. Stir in the Bulla Crème Fraîche, lemon zest, and about 2 tablespoons of grated Parmesan. Fold through the spinach and more chopped basil.
Nestle the salmon fillets back into the pan and gently heat through until fully cooked.
Serve with extra basil and a final grating of Parmesan on top.
