This One Pan Peri Peri Chicken Tray Bake is a flavourful, hands-off dinner that brings the heat with Mingle’s Peri Peri seasoning. Marinated chicken, tender potatoes, and vibrant veggies come together in a single tray, roasting to perfection for a deliciously golden and juicy finish. Serve with rice, cabbage slaw, and fresh coriander for a complete meal that's sure to satisfy.
Ingredients

1kg bone in chicken thighs & drumsticks

500g baby potatoes, halved

2 capsicums (red & yellow)

Thickly sliced 1 punnet of cherry tomatoes

Halved 2 corn cobs, cut into 3rds

1 lime, zested and juiced

4 tbsp olive oil

1 tbsp of honey

50 ml of chicken stock

4 tbsp of Mingle's Peri Peri Seasoning

1/2 cup of Greek yoghurt
Marinade
Marinade:
Directions
Mix all of the marinade items together to form a paste. Cover your chicken and leave to marinade for 1-2 hours minimum.
Preheat the over to 200C. Load the potatoes & chicken onto a tray, making sure all the marinade goes with it.
Mix together and roast for 40 minutes until chicken has nice browned.
Now remove the tin and add the peppers, tomatoes & corn.
Return to the oven and roast for another 20 minutes.
Remove from the oven and let cool for 10 mins.
Serve with a cabbage slaw, rice & fresh coriander.
