Ingredients

250g low carb potatoes

150g diced chicken breast

1/4 cup corn

1/2 cup diced capsicum

1/4 cup diced onion
-
1/4 packet Mingle Peri-Peri seasoning

100ml chicken stock

50g cottage cheese
-
20g mozzarella cheese
Directions
Preheat the oven to 180°C.
In a glass meal prep container, add all ingredients except the mozzarella. Mix well.
Top with mozzarella and bake for 35–45 minutes until cooked through.
Optional: Serve with natural yoghurt and spring onion.
