Ingredients

500g chicken breast, cut into bite-sized pieces

2 tbsp olive oil (or oil from sun-dried tomatoes jar)

3 garlic cloves, minced

100g sun-dried tomatoes in oil, drained and chopped

2 tbsp Mingle Tuscan Seasoning

300g penne pasta
-
500ml chicken stock
-
200ml cream (thickened or double cream)

50g grated Parmesan
-
100g baby spinach
-
Salt and pepper, to taste
Directions
Heat olive oil in a large pan over medium-high heat. Add chicken with 1/2tbsp of Mingle Tuscan Seasoning and cook until browned. Remove and set aside.
- In the same pan, sauté garlic and sun-dried tomatoes for 1–2 minutes.
- Add remaining Mingle Tuscan Chicken Seasoning and stir through.
- Add uncooked pasta and chicken stock. Bring to boil, then reduce heat to simmer.
- Cover and cook for 10–12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
- Return chicken to pan. Add cream and Parmesan. Stir until cheese melts and sauce thickens slightly.
- Stir in baby spinach and cook for 2–3 minutes until wilted.
Recipe Note
• Make it lighter: Use reduced-fat cream
• Add heat: Include a pinch of chilli flakes with the garlic
• Freezer-friendly: Store in airtight containers up to 3 months
