Ingredients
- 300g chicken breast or thigh, sliced
- 2 tbsp Mingle Backyard BBQ Seasoning
- 2 cups cauliflower rice (fresh or frozen)
- 1 cup shredded lettuce
- ½ cup charred corn kernels (1 cob, grilled)
- 1 small avocado, sliced
- ½ block of feta, cubed
- 1 tbsp olive oil
- Optional toppings: pickled onion, fresh coriander, lime wedges
Directions
Toss chicken in oil and Backyard BBQ Seasoning. Grill or pan-fry over medium-high heat until cooked through and browned.
- Coat corn in Backyard BBQ Seasoning and on the BBQ. Grill or pan-fry over medium-high heat until charred, then slice off kernels.
- Sauté cauliflower rice in a dry pan for 3–5 minutes until heated and lightly toasted.
- Assemble bowls with lettuce, cauliflower rice, BBQ chicken, charred corn, feta, avocado, and optional sweet potato. Mix in the dressing.
- Top with pickled onion, coriander, or a squeeze of lime if using.
Recipe Note
Make it veg: Use BBQ-seasoned tofu or tempeh
Bulk prep: Grill extra chicken and corn for weekday lunches
Dressing idea: Greek yoghurt + lime + honey + 1 tsp of Mingle Backyard BBQ for a simple drizzle
