Ingredients
- 1 Sachet Mingle Japanese Curry Recipe Base Sachet
- 2-3 Tbsp Mingle Everything Bagel Seasoning
- 1 Large Carrot diced

2 Potatoes (cubed)

1 Onion finely chopped
- 1 Tsp Ginger grated
- 1 Apple grated

4 Small chicken breasts
- 1 Tbsp Tomato paste
- 350 ml Chicken stock
- 1-2 Cup Panko breadcrumbs

2 Eggs beaten
Directions
- Heat olive oil in a large pot & cook onions, ginger, carrots and potatoes for 5-6 mins.
- Add in grated apple and cook for an additional 5 mins.
- Cover contents of the pan in Mingle's Japanese Curry sachet & mix in tomato paste and stock.
- Cover with a lid & allow to simmer for 15 mins.
- Whilst curry is cooking, prepare your chicken by pounding it until thin.
- Dip your chicken in eggs then into panko & Mingle's Everything Bagel Seasoning and fry until golden brown and cooked through.
- Serve your curry on rice, top with chicken katsu and garnish with parsely.
