Ingredients
- 1 carrot, cut into small cubes
- 1 brown onion, diced
- 440g wok ready udon noodles
- 1kg chicken mince
- 1 sachet Mingle Japanese Curry Recipe Base
- 1L chicken stock
- Boiled egg (1 per serve)
- Steamed pak choy
- Fresh coriander
- Sesame seeds

Directions
Heat a drizzle of oil in a large pan over medium heat
- Add the onion and carrot, sauté for 3-4 minutes until the onion is translucent & carrot begins to soften.
- Add in the chicken mince, using a spatula to break it up unto smaller pieces.
- Add the chicken stock, stir, then follow with 1 sachet of the Mingle Japanese Curry Recipe Base
- Bring to a Gentle simmer and cook for 10 minutes.
- Meanwhile, cook udon noodles as per packet instructions
- Add noodles to dish and continue simmering for 3 minutes
