Ingredients
- 300g chicken mince
- 150g sweet potato, peeled and cubed
- 1½ tbsp Mingle Tuscan Chicken Seasoning
- 1 tbsp olive oil
- 1 cup steamed or roasted broccoli
- ½ cup cherry tomatoes, halved
- 1 cup rocket or baby spinach
- 100g cottage cheese
- ½ avocado, sliced
- 1 tbsp lemon juice or balsamic vinegar (optional)
Directions
Preheat oven to 200°C. Roast sweet potato with a little oil for 20–25 minutes until golden and tender.
- Heat a pan over medium heat. Add ½ tbsp oil and chicken mince. Cook until browned, breaking it up with a spoon. Add Tuscan Chicken Seasoning and cook for 1–2 minutes more.
- In each bowl, layer spinach, sweet potato, broccoli, and cherry tomatoes.
- Top with seasoned chicken mince, cottage cheese, and avocado slices.
- Drizzle with lemon juice or balsamic if using. Serve warm or cold.
Recipe Note
Meal prep: Store ingredients in separate containers for 3–4 days
Swap idea: Use quinoa or brown rice instead of sweet potato for variation
Add heat: Mix a little chilli or smoked paprika into the mince
