Ingredients
- 300g chicken breast, thinly sliced
- 2 tbsp Mingle Taco Seasoning or Mellow Taco if you don’t want the heat
- 1 tbsp olive oil
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved
- 1 cob of corn, charred
- ½ avocado, sliced
- 2 tbsp sour cream or Greek yoghurt
- Juice of ½ lime
Directions
Toss chicken with oil and Mingle Taco Seasoning.
- Heat non-stick pan over medium-high heat. Cook chicken 3–4 minutes each side until cooked through.
- Assemble bowls: base of lettuce, then top with chicken, tomato, avocado & corn.
- Drizzle with lime juice and a spoon of sour cream or yoghurt.
Recipe Note
Meal Prep: Cook extra chicken for wraps or salads.
Swap: Use tofu for a veg option.
