Healthy Girl Bowl
The healthy girl bowl trend with mince meat absolutely popped off over the last few weeks and it’s time for a new bowl we reckon. This one’s got crispy salmon bites, creamy avo, crunchy veg and a sweet drizzle made with Mingle’s Furikake Rice Topper Seasoning — think sesame, seaweed and a touch of umami magic. Fresh, flavour packed and ready in minutes.

Ingredients
- 250g salmon fillets

2 cups cooked rice (freshly cooked jasmine or basmati, or microwave rice for ease)

1 carrot

1 Lebanese cucumber
-
½ an avocado
-
½ cup frozen edamame beans

1 tbsp soy sauce
-
1 tbsp Mingle Sweet Chilli Sauce

2 tbsp hot honey (we used @capilanohoney)

2 tsp Mingle’s Furikake Rice Topper Seasoning

1 spring onion
-
Coriander (optional)
Directions
- Shred the carrot, slice the cucumber, chop the spring onion and cube the avocado
Cut the salmon into 1.5 cm cubes and marinate with soy sauce and sweet chilli sauce
Cook the salmon in an air fryer at 180°C for 8 minutes
Microwave edamame with a splash of water for 3 minutes then drain and set aside
Cook rice if using uncooked (1 cup rice to 2 cups water). Otherwise, heat cooked or microwave rice
Heat honey for 20 seconds then stir in Mingle’s Furikake Rice Topper Seasoning to create your flavour packed drizzle
Assemble bowls with rice, veg, avocado, edamame and salmon. Drizzle with furikake honey.
Top with spring onion and coriander. Serve and devour
