Ingredients

500g chicken thigh fillets - diced

2 tbsp Mingle Use Me On Everything Seasoning

1 tbsp olive oil
-
2 cups cooked brown or white rice

1 cup steamed green beans
-
1 medium sweet potato, cubed

1 cup cherry tomatoes
-
1 carrot, grated
-
1 avocado, diced
-
¼ cup crumbled feta
-
¼ cup Greek yoghurt (optional)

Lemon wedges, to serve
Directions
Preheat oven to 200°C. Toss cubed sweet potato and cherry tomatoes with a drizzle of oil and a pinch of Mingle Use Me On Everything Seasoning. Roast for 20–25 minutes until sweet potato is golden.
- Rub chicken with olive oil and Mingle seasoning. Grill or pan-fry over medium heat for 5–6 minutes per side, until cooked through. Rest and slice.
- Assemble bowls with rice, sliced chicken, green beans, roasted sweet potato, tomatoes, grated carrot, avocado, and feta.
- Top with yoghurt and a squeeze of lemon if using.
