Ingredients

300g chicken breast or thigh fillets

1½ tbsp Mingle Garlic & Herb Seasoning

1 tbsp olive oil

2 cups mixed salad greens
-
½ cup chopped cucumber

½ avocado, sliced
-
½ cup steamed or blanched green beans or asparagus

¼ cup fresh herbs (mint, parsley, coriander), chopped

2 spring onions, finely sliced

Juice of ½ lemon

1 tbsp olive oil
-
½ tbsp Mingle Garlic & Herb Seasoning

Directions
Prep chicken: Toss chicken in olive oil and Garlic & Herb Seasoning.
- Air fry: Place chicken in the air fryer basket. Cook at 200°C for 12–14 minutes, flipping halfway, until browned and cooked through. (Time may vary by thickness and model.)
- Rest and slice chicken once cooked.
- Make dressing: Mix lemon juice, oil and seasoning
- Assemble salad with greens, cucumber, avocado, green beans/asparagus, spring onions, and herbs.
- Top with sliced chicken and drizzle over dressing.
Recipe Note
For crispier results: Use thigh fillets and don’t overcrowd the basket.
Short on time: Use pre-cooked chicken and just build the salad.
