Ingredients

4 large chicken cutlets, skin on
- Mingle Lemon Herb Roast or Rub
- 3 white potatoes, peeled and cut into wedges
- 1/2 white onion
- Olive oil
- Lemon Slices
- Parsley
Directions
Preheat your oven to 180 degrees Celsius fan forced. Pat the chicken cutlets dry and add them to a large bowl. Sprinkle over 3/4 of the Mingle Lemon Herb Roast or Rub packet, drizzle with olive oil, and mix until all is coated.
- Place the potato wedges and onion slices in a baking dish, drizzle with olive oil, and mix with the remaining 1/4 of the Mingle Lemon Herb packet.
- Add the chicken pieces on top of the potatoes and onions, and scatter fresh lemon slices around the chicken. Bake for 40-45 minutes.
- Top with fresh parsley upon serving.
