Ingredients
- 1–1.2kg pork belly

4 tbsp Mingle BBQ Pork Hoisin Rub

1 tbsp white vinegar
-
1 tbsp salt
-
1 tbsp olive oil
-
1.5 cups rice
-
2 spring onions, finely chopped
-
2 carrots, grated
-
Coriander (optional)

4 tsp Mingle Furikake Seasoning
Directions
Prep the Pork:
Pat the pork belly dry on both sides. On the flesh side, cut lengthwise into strips. Flip over and score a criss-cross pattern into the fat (being careful not to cut too deep).
Season:
- Rub the Mingle BBQ Pork Hoisin Rub onto the flesh side of the pork. Tightly wrap the pork in foil, leaving the skin exposed.
Crisp the Skin (Step 1):
- Brush the skin with white vinegar and sprinkle with a little salt. Air fry at 180°C for 20 minutes.
Cook the Rice:
- While the pork is cooking, prepare rice according to packet instructions.
Crisp the Skin (Step 2):
- Remove pork from the air fryer, brush the skin with olive oil, then air fry again at 200°C for 10 more minutes. Let the pork rest for 10 minutes before slicing.
Assemble the Bowl:
- Serve rice topped with sliced pork belly, grated carrot, chopped spring onion, coriander (if using), and 1 tsp Mingle Furikake Seasoning per serve. Drizzle with soy sauce if desired.
