Ingredients
- 1 sachet Mingle Chow Mein Spice Blend

500g chicken breast mince

½ Chinese cabbage, shredded

1 carrot, finely sliced

2 spring onions, sliced (separate white and green ends)

1 red chilli, finely sliced

2 tbsp chopped coriander
-
2 tbsp rice wine vinegar

2 tbsp sesame oil
-
2 tbsp Mingle Sweet Chilli Sauce

½ cup crispy fried noodles
Directions
Prep the veg:
- Finely slice carrot, spring onions, cabbage, and chilli. Set aside.
Cook the chicken:
- Heat 1 tbsp sesame oil in a pan on high. Add chicken mince and cook for ~5 mins until sealed.
- Add the white part of the spring onions and Mingle Chow Mein Spice Blend. Cook for another 8 mins until browned and a bit crispy.
Make the vinaigrette:
- In a small bowl, mix rice wine vinegar, the remaining sesame oil, and Mingle Sweet Chilli Sauce.
Assemble the salad:
- In a large bowl, combine cabbage, carrot, green spring onions, chilli, coriander, and cooked chicken.
Dress and finish:
- Drizzle over the vinaigrette. Top with crispy noodles just before serving for that epic crunch.
