Creamy Garlic & Herb Slow Cooker Chicken Soup

Ingredients

1kg boneless chicken thighs – Leave whole

1 onion, diced

2 carrots, thinly sliced

2½ cups chicken stock

2 tbsp Mingle Garlic & Herb Seasoning

1 tbsp olive oil
-
½ cup cream or light cooking cream (add at end)

Juice of ½ lemon (add at end)

100g of parmesan cheese, grated

2 cups baby spinach or chopped kale
Directions
Place onion, carrots, and chicken into the slow cooker.
- Drizzle with olive oil and sprinkle over the Garlic & Herb Seasoning.
- Pour in chicken stock and stir gently.
Cook:
- Low: 6–7 hours
- High: 3–4 hours- Shred or roughly break apart the chicken in the cooker.
- Stir in cream, cheese and lemon juice. Let cook uncovered on high for 10–15 minutes to thicken slightly.
- Stir through spinach just before serving.
Recipe Note
Serving ideas: Great over mash, cauliflower mash, rice, or with crusty bread
Make it dairy-free: Sub cream with coconut cream or a plant-based option
Add more veg: Zucchini or mushrooms can go in during the last 2 hours
