Ingredients
- 500g beef mince
- 1 onion, diced
- 2 tbsp Mingle Taco Seasoning
- 400g tin diced tomatoes
- 1 cup beef stock
- 250g dried pasta (e.g. penne or shells)
- 1 cup grated tasty cheese
- ½ cup sour cream
- Olive oil
- Salt to taste
Directions
Preheat oven to 180°C (fan-forced).
- Cook pasta in salted water until just under al dente. Drain and set aside.
- Heat oil in a large frying pan over medium heat. Add onion and cook 3–4 minutes until soft.
- Add mince, breaking up with a spoon, and cook until browned.
- Stir in Mingle Taco Seasoning, diced tomatoes, and beef stock. Simmer for 5 minutes.
- Stir in sour cream and cooked pasta. Mix to combine.
- Transfer to a baking dish. Top with grated cheese.
- Bake for 15–20 minutes until golden and bubbling.
Recipe Note
Leftovers: Reheat well for lunchboxes or freezer meals.
Swaps: Use gluten-free pasta and dairy-free cheese/sour cream as needed.
